Remove the soup from the heat, and purée with an immersion blender or in a food processor until almost smooth. A little texture is delicious.

Transfer the soup back to the saucepan and stir in the basil and oregano.

Season with salt and pepper and serve with a generous drizzle of kefir.

Make Ahead: This soup freezes very well, so double the recipe, cool, and package into 1-cup serving containers. Label with the date and freeze for up to 3 months. Do not add the kefir until the soup is reheated, because this ingredient should not be frozen.
